Open your restaurant with someone who has opened 28
The first 90 days decide most new restaurants. Menus get priced by gut, the team gets hired a week late and trained on the fly, and opening night becomes the first real rehearsal.
I've opened 28 restaurants in more than 20 years, taking units from build-out through hiring, training, and launch at Huxley Wallace Collective (11 locations), growing Skillet from a food truck to 4 locations, and founding Burbs Burgers (5 locations). I'm a CIA-trained chef, a former chef instructor, and ServSafe Manager certified.
What we build together
- Menu and costing. Recipe cards, plate costs, and prices that hit a target food cost.
- Ordering and setup. Vendor list, order guide, opening pars, kitchen and bar station setup.
- Hiring plan. Org chart, job posts, interview questions, and a staffing schedule built to forecast sales.
- Training. A day-by-day training plan, line checks, service steps, opening and closing checklists, and food safety basics.
- Soft open. A friends-and-family run of show, a ticket-time and plate check, and a punch list before you open.
- 30 days after. A check-in on sales, labor, and food cost against plan.

Do you handle permits, liquor licensing, or build-out?
No. I'll tell you what to ask and refer you to the right professional.
When should I call?
Ideally 6 to 10 weeks before opening, when you're hiring and finalizing the menu.
We're taking over an existing restaurant. Does this apply?
Yes, and so does opening a second location.
