Know Your Numbers: a 90-minute workshop for owners
Most owners can tell you their sales. Far fewer can tell you their labor percentage, their prime cost, or how much cash they'll have in eight weeks. This workshop fixes that, in plain English, without a finance degree.
I ran restaurant groups of 4, 11, and 5 locations with more than $20M in combined revenue and read the P&L every week as an owner. I've also taught as a chef instructor at the Art Institute of Seattle and worked as a small business advisor in Whatcom and Skagit.
What owners learn
- The 5 numbers that run a small business: sales, cost of goods, labor, prime cost (for restaurants), and cash on hand
- A one-page weekly scorecard: build it in 15 minutes, update it every Monday in 10
- Labor that follows sales
- Pricing with confidence: recipe and job costing basics
- Cash, not just profit: a simple 13-week cash view
- Your next 3 moves
Owners leave with: a fill-in-the-blank weekly scorecard, a costing worksheet, a 13-week cash template, and their own action list.
